There are plenty of recipes out there, but here’s how I do mine—based on my usual Chipotle order: Bowl, White Rice, Chicken, Fajita Veggies, Tomato Salsa (Pico de Gallo), Corn Salsa, Tomatillo Hot Salsa, Sour Cream, Lettuce, Cheese + Vinaigrette (based on mood).
p.s. This post doesn’t have Fajita Veggies and Vinaigrette because I have not recreated them yet.
Chipotle Chicken
Ingredients:
Chicken—diced, boneless, skinless
Marinade:
Chipotle peppers in adobo sauce
Cumin
Garlic powder
Dried oregano
Salt & pepper
Smoked paprika (opt.)
Instructions:
Blend marinade ingredients into a smooth paste.
Coat the chicken and let it marinate while preparing other toppings.
Grill on high heat until fully cooked and slightly charred.
Pico de Gallo
Ingredients:
Red onion, finely diced
Jalapeño, finely diced
Cilantro, chopped
Lime juice
Roma tomatoes, diced
Salt
Instructions:
Mix the 4 main ingredients first: onion, jalapeño, cilantro, and lime juice. Set some aside for other toppings (only if you are making Corn Salsa/Hot Salsa/Guacamole).
Add tomatoes and salt, then mix.
Corn Salsa
Ingredients:
Corn (fresh, frozen, or canned)
Red onion, finely diced
Jalapeño, finely diced
Cilantro, chopped
Lime juice
Lemon juice
Salt
Instructions:
Mix all ingredients and let sit for at least 10 minutes. (Use the 4 main ingredients we set aside when making Pico de Gallo!)
Hot Salsa
Ingredients:
Tomatillos, husked and chopped
Garlic, minced
Ancho chiles, ground
Cumin
Red onion, finely diced
Jalapeño, chopped
Cilantro, chopped
Lime juice
Salt & pepper
Instructions:
Blend everything until smooth. Adjust seasoning as needed. (Use the 4 main ingredients we set aside when making Pico de Gallo)
Guacamole
Ingredients:
Ripe avocados, mashed
Red onion, finely diced
Jalapeño, finely diced
Cilantro, chopped
Lime juice
Lemon juice
Salt & pepper
Instructions:
Mash avocados and mix with the 4 main ingredients we set aside when making Pico de Gallo.
Stir in lemon juice and salt.
Cilantro Rice
Ingredients:
Long grain white rice
Bay leaf
Water
Oil
Cilantro, chopped
Lime juice
Lemon juice
Salt
Instructions:
Rinse rice and cook (in normal setting) with bay leaf and a splash of oil.
Fluff and let cool slightly before mixing in cilantro, lime, and lemon juice.
Assembly
Layer everything with some extra toppings:
Romaine lettuce
Sour cream
Shredded white cheddar/Monterey Jack cheese
Beans (I don’t like beans. Look for recipe somewhere else please. There’s beans in the pic because my friends love them but I could only find refried pinto beans and people hated me for that)
