Indonesian chicken noodle
Bakmi Ayam - one of my favourite Indonesian foods that I always have stocked in my fridge. This makes for a quick, easy, and delicious meal as the sauces can be stored in the fridge!
Ingredients:
Fresh wheat noodles
Sweet soy chicken marinate (measure by ♡)
15-30 mins is enough marination
chicken thighs, cubed
salt
white pepper
garlic powder
sweet soy sauce/soy sauce + oyster sauce
Infused oil
Makes about 10 portions
1c neutral oil
aromatics:
10 garlic cloves
2 shallot
3 scallion
Infused soy sauce
Makes about 10 portions
3/4c soy sauce
Infused oil’s aromatics
celery leaf
5tbsp water
3tbsp sugar
Chilli sauce (optional, measure by ♡)
garlic cloves : thai chilli ratio = 1:5
water, sugar, splash of white vinegar, chicken bullion
Extra
chopped scallions
fried shallots
Step-by-Step
Combine infused oil ingredients in a pan and fry on low heat until the aromatics are fragrant and golden brown
Strain the aromatics-infused-oil, and keep the oil in a jar*
Pour soy sauce into the pan with the fried aromatics, celery, water, sugar, and let simmer on low heat
Strain the soy sauce from the aromatics and keep the filtered soy sauce in a jar
Pan-fry marinated chicken with ~1tbsp the aromatic oil on medium heat
Boil your fresh wheat noodles of choice according to package instructions
Assemble your bowl! Recommendations per serving:
1 tbsp soy sauce : 2 tbsp oil
Boiled wheat noodles, mix
Add toppings: chicken, scallions, fried shallots, chilli sauce
Slurp slurp gulp gulp
Notes:
*save some aromatics here for extra topping if you want, before adding soy sauce
This recipe’s sauces make about 10 portions, I always make a big batch and keep them in the fridge as they last for months! Just boil noodles & make the chicken (or no topping) if I want to eat, this is basically a homemade not-so-instant instant noodle.
